Ingredients
1large clove garlic minced
1large sweet onion chopped
1large green pepper seeded and chopped
1large red pepper seeded and chopped
2tablespoonsolive oil
2poundslean ground beef
3cans14.5 oz petite diced tomatoes
I can14.5 oz chili beans in mild sauce
1can14.5 oz kidney beans (drained)
3 to 4tablespoonschili powder
1tablespoondried oregano
2teaspoonscumin
1teaspoonpaprika
1teaspoondried basil
Garnish:
Sour cream
Shredded sharp cheddar cheese
Fresh cilantro
Instructions
Add olive oil to the skillet then heat over medium, cook green and red pepper for 3 minutes, then add cook garlic and onions cook until vegetables are tender.
Transfer cooked vegetables to the crockpot.
Brown ground beef in the skillet until no longer pink, drain off the grease and add to the crockpot.
Open canned tomatoes, and beans then, add to the crockpot.
Add all spices (not fresh cilantro) to the crockpot. Stir.
