Chocolate Chip Cheesecake Bars

These amazing bar cookies have a classic chocolate chip cookie dough crust with a light and fluffy cheesecake center.

– 40 oz Refrigerated chocolate chip cookie dough – 16 oz Cream cheese – 1 egg – 1/4 cup Granulated sugar – 1/2 teaspoon vanilla – 1 teaspoon lemon juice optional

– Line a 13x9" pan with parchment paper or non-stick foil. – Slice half the cookie dough into 1/4" slices and place it in the bottom of the lined pan.

– Press the cookie dough into the pan. – Bake in a preheated 350-degree oven for 10 minutes

– While baking, beat cream cheese, egg, sugar, and vanilla together in a mixer on medium speed. Spread the cheesecake over the crust as soon as it comes out of the oven. –

– Slice the remaining cookie dough and place it on the top of the cheesecake layer. – Bake for another 35 to 40 mins. – Cool then, refrigerate before serving. –
