Cowboy caviar, or Texas caviar, is an easy fresh dip that takes less than 15 minutes to whip up. It has a zippy, tangy, fresh flavor that pairs with grilled meats, tortilla chips, etc.

Instructions
Dressing
In a wide-mouth jar, add all the dressing ingredients, then screw on the lid and shake to incorporate.
Vegetable Preparation
Place the drained and rinsed black beans and black-eyed peas in a large bowl.
Next, add the drained corn.
Chop/dice the red onion, red and green peppers and place in the bowl.
Seed and dice the Roma tomatoes, and then add them to the bowl.
Rinse, then chop the cilantro and place in the bowl.
Tossing Vegetables with Dressing
Give the dressing jar a few good shakes, remove the lid, and pour over all the vegetables and cilantro. Toss.

*Freshly cooked or thawed frozen corn can be used for this recipe.
