Ingredients
2bananas
⅛cuppeanuts
½cupDark chocolate
⅓cupSmooth peanut butter
1teaspoonCoconut oil
Instructions
Slice two firm ripe bananas.
Place banana slices on a sheet pan lined with parchment paper. Make sure the slices are close together, and their sides are touching.
The peanut butter can be difficult to spread. Therefore, I microwave it for 10 to 15 seconds. Then, pouring on and spreading with a silicone spatula is easy. You can move your sheet pan with the banana mixture to the freezer while preparing your chocolate or leave it out.
Melt the chocolate chips in a double boiler over medium heat. Add one teaspoon of coconut oil to the melting chocolate and stir.
Pour the chocolate mixture over the bananas and peanut butter, then spread out evenly.
Sprinkle on chopped peanuts. Then, transfer the sheet pan to the freezer until set.
To serve, either break apart or cut pieces.
Notes
Select bananas that are ripe and very firm. Overripe bananas will not work.
