Rotel Dip Ingredients
Ground Beef: Ground beef gives this dip texture and flavor.
Rotel tomatoes: A can of Rotel adds a bright flavor and heat to this dip. You can choose from mild to hot Rotel depending on your taste.
Velveeta: Creamy Velveeta is the base for this dip. Adding a creamy texture and cheese flavor that pairs perfectly with the ground beef and Rotel.
How to Make Rotel Dip
Step 1
Cook ground beef over medium-high heat in a large deep fry pan stirring and breaking up any large clumps with a ground beef masher. Continue stirring until no pink remains. Drain.
Step 2
Lower heat to medium. Then place Rotel tomatoes (undrained) and cubed Velveeta cheese in the pan with the meat. Stirring constantly until cheese is melted and dip is smooth.
Step 3
Transfer warm dip to a serving dish or mini slow cooker and serve with tortilla chips.
Recipe Variations & Tips
You can use ground beef (I use lean), ground turkey, ground chicken or sausage as your meat.
This recipe can be made in a slow cooker. Add the cooked drained ground beef to the slow cooker then add cubed cheese and Rotel tomatoes. Set temperature to low cook two hours stirring occasionally or until the cheese is melted. Then, turn the slow cooker to warm. Enjoy.

FAQ
Why is my Rotel dip grainy?
The heat is too high.
Can I substitute something else for the Rotel?
Yes, you can use salsa or a can diced tomatoes with green chiles.
Can the leftovers be reheated?
Reheat in a thick bottom pan or microwave to reheat. If the dip gets too thick you can thin with milk.
