While planning to bake some cookies I remembered that years ago I used to make Nestle Toll House Cookies in a 9″ by 13″ pan instead of the usual drop cookies. Why not make the best chocolate chip cookie recipe as easy bar cookies?
Homemade Chocolate Chip Cookie Recipe
Since I wanted to make to bar cookies and I wanted them to be extra special I decided to use cake pans instead of the usual 9″ by 11″ pan for my cookies. The original Nestle ® Toll House Cookie recipe from the back of the chocolate chip bag is what I used for these easy bar cookies. This is just the right size to make for gift-giving.
Cookie Bar Pans
The cake pans I used were 7″ and 9″ thus if you have two 8″ pans they will work too. I was concerned about the cookies baking over the pans, but these pans worked out perfectly. I used a little more than half the recipe in the 9″ pan and the remaining in the dough in the 7″ pan.
See how to prepare the pans in this earlier post. Please note they took longer to bake (25 to 30 minutes) so after 25 minutes check for doneness.

Melted Chocolate Toppings and Chocolate Icing
Adding melted chocolates and chocolate icing transforms this bar cookie into a special chocolate chip cookie cake. I like to use dark chocolate for the icing since it adds a rich chocolate finish. See this earlier post for this amazing chocolate icing recipe.

Christmas Chocolate Chip Cookie Cake
To make this Christmas bar cookie I used a little less than half of the Nestle ® Toll House Cookie Recipe and added a few red and green candies that I pressed on top before baking.
Icing and Decorating Christmas Bar Cookies
The second cookie cake I decorated for Christmas using green and red candy melts applying with decorating bags and piped on chocolate icing. I am giving these away for gifts since everyone loves them and they are so easy to make. I get two cookie cakes from every recipe.
