The best way to eat a sugar cookie is when it’s the size of a cake! This soft sugar cookie cake is so easy you will want to make it for birthdays, Christmas cookie exchanges, and just because!
Sugar Cookie Cake
Sugar cookie cake with added sprinkles and icing is irresistible! Everyone will ooh and aah when you serve this easy cookie cake. The quick cookie cake recipe I use is one of my little culinary secrets.
You guessed my secret recipe if you guessed Betty Crocker Sugar Cookie cookie mix. This recipe only requires butter and an egg. It is super quick to DIY cookie cake recipes when you start with a mix and add your special garnishes such as sprinkles, candies, berries, etc.
Cookie Cake Baking Pans
If you are wondering how to make the best cookie cake then I have some great ideas starting with the pan and preparing the pan. To save on time and money I used a 9″ cake pan I had on hand. If you are using a cake pan that is smaller than 9″ the mix may over bake the sides of the pan so remove some of the mix and make a few drop cookies too.
The bakery chef professional baking tip is to cut a non-stick parchment paper pan liner. I use a pencil and trace the bottom of the pan on the parchment paper.

Once my pan pattern is marked on the parchment paper I use my favorite kitchen scissors to cut it out. Next, I use bakers non-stick spray to grease the pan and then place the parchment circle in the bottom.

Sugar Cookie Cake Extra Options
How could these cookie cakes get any better, well, your special mix in goodies is how. Did I mention that I love Heath candy bars? Can you imagine the culinary delight that would offer a cookie cake? Don’t stop there you can add marshmallows, chocolate chips, etc. Note that you can add up to 1/4 cup of mix in goodies or your cake will bake over.
Cookie Cake Icing
Icing your cookie cake what could be sweeter? If you are making a birthday cookie cake then adding icing is a must. The icing can be added over the entire cake and/or use a pastry bag and pipe it on in any arrangement.
Ingredients
- 1 Stick Unsalted Butter softened not melted
- 4 Cups of 10X sugar
- 5 to 7 Tablespoons Cream or milk
Instructions
- Using an electric mixer to cream butter and sugar together at a slow speed. Then slowly add cream one tablespoon at a time until the icing mixture is firm and smooth.
- Frost your cake or cupcakes and enjoy!
