Why Make a Peach Galette?

Well, peaches are a favorite summer dessert. This easy, free-form dessert is adjustable to include your favorite fruit filling. You can substitute the peaches with other fruits such as strawberries, apples, blackberries, etc.

Another option would be to divide the pie dough into four servings instead of one large galette.

It takes less than half the time as pie and is just as delicious.

Peach Galette Recipe

Our area has farms where you can pick your own peaches to make a tasty galette. We picked a half-bushel of peaches for eating and baking. So far, I have baked them in a peach cobbler, peach crisp, peach pie, and now this gorgeous peach galette.

My favorite of all these peach treats is this Peach Galette recipe.

  • Peaches: Use fresh peaches or nectarines. I do not recommend using over-ripe peaches. I like yellow peaches that come off the pit easily for this recipe. You can leave the peels on, or you can remove them.
  • Lemon: Lemon juice adds a bit of zing and balances the sweetness of the peaches and sugars.
  • Vanilla Extract: Vanilla extract pairs wonderfully with peaches while adding a subtle sweetness.
  • Granulated Sugar: Sugar adds sweetness. During baking, it combines with peach juices to create a glorious syrup.
  • Brown Sugar: The addition of brown sugar adds richness. Brown sugar creates a caramel-like syrup during baking, making a unique filling.
  • Corn Starch: To thicken the juices that the peaches release.
  • Cinnamon: The addition of ground cinnamon adds warmth to the galette.
  • Butter: The butter dots melt into the peaches, adding an unparalleled richness.
  • Prepared Pie Crust (rolled): Flaky pie crust and juicy peaches are perfect together.

How to Make a Peach Galette

Preheat your oven to 400 degrees F while you make the galette.

Making a galette is so easy and fast. It is like a pie but so much easier.

Crust

Pie crust (galette dough): If you’re short on time, a pre-made pie crust is a great option. But if you have the time, you can make your own pie crust using my favorite dough recipe.

After the pie crust is ready to use, place it on lightly floured parchment paper.

Carefully unroll the crust, then use a rolling pin to roll out the crust to a twelve-inch circle. Don’t worry if your circle is not perfect.

Lift the sides of the parchment paper and place the crust and the parchment paper on a rimmed half-sheet pan.

Filling

Peach filling: Juice half a lemon into a medium mixing bowl.

Add vanilla extract to lemon juice.

Next, whisk the tapioca flour into the lemon juice mixture until there are no lumps.

Then, slowly whisk in the sugars and cinnamon, starting with the granulated sugar and ending with the cinnamon.

The mixture should be smooth without lumps.

Pour lemon mixture over sliced peaches into a large mixing bowl. Use a spatula to stir peaches to coat with the lemon mixture gently.

Arranging Peaches

Arrange Peaches on Crust: Arrange the peaches on the crust in a circle about two inches from the edge.

Next, fill in the remaining center of the circle.

Pour any juices left in the bowl over the peaches.

Form crust outer edge: Start folding the outer edge of the crust over the peaches, crimping when necessary.

Put small pieces of butter on the peaches, then brush milk on the crust and sprinkle sugar on the egg wash.

Bake: Transfer the sheet pan to a preheated oven and allow to bake for 25 – 30 minutes.

After 25 minutes, check if the galette’s crust is golden brown. If not, bake for another 5 minutes or until it turns golden brown.

Allow the galette to rest for five minutes before serving.

Allow to cool for 15 minutes then transfer the galette to a serving platter.

Peach Galette Serving Suggestings

The best way to eat a peach galette is warm topped with vanilla ice cream or whipped cream.

You can add any topping to customize it to your taste!

Eat it warm or at room temperature.

How to Store

Once the galette is cool, wrap it in plastic and keep it at room temperature for two days.

You can store the galette in a sealed container to keep it fresh.

Store it in the refrigerator for up to four days, and you can store it in the freezer for two months.

To serve, allow the galette to come to room temperature.

You can reheat the galette in the microwave.

  • 3 cups Peaches sliced
  • cup granulated sugar
  • cup brown sugar

  • 1 Tablespoon milk
  • 2 teaspoons coarse sugar

Instructions

  • Preheat oven to 400 degrees F.

  • Bake: Transfer the sheet pan to a preheated oven and allow to bake for 25 – 30 minutes.
  • After 25 minutes, check if the galette's crust is golden brown. If not, bake for another 5 minutes or until it turns golden brown.
  • Allow the galette to rest for five minutes before serving.
