Easy Strawberry Shortcake Recipe

Strawberry shortcake is the perfect combination of sweet strawberries, flaky biscuits, and creamy whipped cream.

Since this was my grandmother’s favorite cake, I learned to make it years ago. I am sharing our family recipe so you can enjoy it, too. I found the biscuit recipe in my mother’s recipe box. My sister wrote the recipe.

Preparing Strawberries

Fresh strawberries are the star of this recipe, so choosing fresh, ripe strawberries is the key to the best results. If it’s the time of year you can visit a pick-your-own farm, I recommend you pick them fresh. However, you can make this recipe all year, so store-bought strawberries also work.

Prepare the strawberries first to allow the berries’ juices to macerate (get juicy).

Use a colander to rinse strawberries, then drain them for a few minutes to remove any extra water.

Next, remove the stems and slice the strawberries into a medium-sized bowl.

To juice or macerate strawberries, sprinkle granulated sugar over sliced strawberries and stir. That’s it!

Note: Frozen strawberries (sliced and sweetened) can used, but the results are not the same.

How to Make the Biscuits (Strawberry Shortcake)

Prepare “shortcakes” homemade biscuits while the berries are juicing (macerating).

The classic biscuit recipe uses shortening; however, you can substitute grated cold butter (unsalted).

Add the flour to a medium bowl and blend in the shortening using two knives or your fingers.

 Then, combine the flour and milk in a bowl. Use a wooden spoon or spatula to mix until a ragged dough forms.

Place dough on a surface dusted with flour.

Using your hands, gently form the dough into a rectangle.

Fold the rectangle of biscuit dough into thirds, then pat it out with your hands to form a rectangle that is ¾ thick. Repeat the process three more times.

Place your biscuit cutter in flour. Then, cut out the biscuits without twisting the biscuit cutter.

Transfer biscuits to a prepared cooking sheet.

Brush the biscuits with cream before baking.

Sweet Homemade Whipping Cream

Prepare whipping cream in a medium bowl, beating with a hand or stand mixer.

Pour heavy cream, vanilla extract, and sugar into the bowl. Beat medium-high until soft-medium peaks form about three minutes.

How to Assemble Strawberry Shortcake

Split room-temperature biscuits in half. Add a dollop of whipping cream to the bottom half of the biscuit. Next, spoon on the juicy strawberries and top with the top half of the biscuit.

Top with strawberries and whipped cream.

Ingredients

Strawberries

  • 1 pound fresh strawberries
  • 3 Tablespoons Grandulated sugar

Shortcakes – Biscuits

  • 2 cups self-rising flour
  • ½ cup vegetable shortening
  • cup milk

Sweet Whipping Cream

  • cups heavy whipping cream
  • ½ cup confectioners sugar
  • 1 tsp vanilla extract

Instructions

  • Place strawberries in a colander and rinse. Next, remove the stems and slice or quarter the strawberries. Place them in a medium bowl.
  • Sprinkle sugar over the sliced strawberries and stir. Set them aside and allow them to get juicy.

Biscuits – Shortcakes

  • Preheat oven to 450 degrees F.
  • Place a piece of parchment paper or silicone baking liner on your baking sheet.
  • * Add the flour to a medium bowl and blend in the shortening using two knives or your fingers.
  • Next, make a bowl in the flour mixture and add 1/3 cup of milk. Mix using a wooden spoon or spatula until a ragged dough forms.
  • Turn out the dough on a surface dusted with flour.
  • Using your hands, gently form the dough into a rectangle.
  • Fold the rectangle of dough into thirds and pat it out with your hands to form a rectangle that is ¾ thick. Repeat the process two more times.
  • Dip your biscuit cutter in flour. Then, cut out the biscuits without twisting the biscuit cutter. *Place biscuits on a prepared cooking sheet. Brush the biscuits with cream or milk before baking. Place the sheet pan in a preheated oven for 10 minutes.

Sweet Whipping Cream

  • Prepare whipping cream in a medium bowl, beating with a hand or stand mixer.
    Pour heavy cream, vanilla extract, and sugar into the bowl. Beat medium-high until soft-medium peaks form about three minutes.

Assembling Strawberry Shortcakes

  • Split cooled biscuits in half. Add a dollop of whipping cream to the bottom half of the biscuit. Next, spoon on the sliced strawberry mixture and top with the top half of the biscuit.
  • Top with a small dollop of whipping cream and a strawberry.

Notes

* Use self-rising flour to dust your work surface.
 
*Place a piece of parchment paper or silicone baking liner on your baking sheet.
