Natural peanut butter frosting

Natural peanut butter frosting

In January 1989 we moved to Italy and we made some wonderful new friends. We did everything together. Birthdays, holidays, and weekend visits to name a few.

During one of our get-togethers my girlfriend, Loreen, served a chocolate cake with peanut butter icing. It was heavenly so I asked for the recipe on the spot. I have substituted butter for shortening and added vanilla flavoring.

What Peanut Butter Should I use for Frosting?

You should avoid natural peanut butters that separate. It will produce a frosting that is a curdling oily mess. Natural peanut butter works great in my recipe for Peanut Butter Cookies and Peanut Butter Blossoms.

Processed peanut butters, like Skippy or Jif, will produce the best texture. You should use creamy peanut butter for the best results if piping but crunchy could be used for other applications but I can not guarantee the result will be as light and fluffy.

Ingredients

  • Powdered sugar – Adds sweetness and thickens the frosting giving it structure. Powered sugar (aka confectioners’ sugar) is perfect for frosting because how easily it incorporates with other ingredients.
  • Butter –  Room temperature. Improves the flavor plus it adds richness and fat.
  • Milk or heavy cream – Thins out the mixture while adding creaminess helping achieve the right texture.
  • Creamy peanut butter – this is the base flavor a of the frosting.
  • Vanilla flavor or vanilla extract – Enhances flavor and color.

Tools and Equipment

Tip: The frosting turns out light and fluffy after whipping it with an electric mixer. A stand mixer does the best job.

How to Frost and Fill Cupcakes

Starting with your filling tip place it in your pastry bag and fill with Peanut Butter frosting. The easiest way to fill your pastry bag is to fit it over the edges of a jar.

Note: You will need 1/4 cup of frosting for each cupcake (more if you like a lot of frosting).

The icing recipe makes enough frosting to frost a  9″ x 13″ cake. Remember how I said I really enjoyed this recipe? I double it for cupcakes, sheet cakes, and layer cakes.

The best chocolate cake ever is so easy and fast to make it is the only chocolate recipe you need. I use DARK chocolate chips for decadent rich cake or cupcakes. It is even better with peanut butter buttercream frosting and filling.

As soon as the cupcakes are cool you can start filling and icing them.

When I look at comments for a recipe it is for the purpose to find out how the recipe worked. Not for comments regarding how 'great the recipe looks'. Why leave a comment if you haven't yet tried the recipe? I don't want your opinion on how it 'sounds' like it might be good. I want to know IF it's good and if there are any tweaks I may need to make.
